Tomato and Honey Salad
This is one of my favourite ways to showcase my backyard honey to students in workshops. It’s a great recipe for the bounty of tomatoes that you may have ripening in your basement in cardboard!
honey
good quality olive oil
sea salt
black pepper
lemon juice (optional)
basil, chives or oregano (optional)
buffalo mozzarella (optional)
I am not giving quantities for this salad, because it really is as simple as making a single serving or making a big serving for a get together – either way it’s the same thing!
Chop the tomatoes in various ways, my favourite way is to use different coloured, shaped and sized tomatoes. Slice some, cube some, half some etc., to keep the salad interesting to the eye. Drizzle with a good bit of honey and olive oil (for 1 medium tomato I would say ½ tsp of each), season with salt and pepper. You can add a bit of lemon juice, finely chopped chives or oregano, torn basil or buffalo mozzarella if you wish, but I often just serve it simply with the honey, oil, salt and pepper!
