Flour Tortillas

Homemade tortillas are so easy, a fun thing to do with kids and are super quick to make.

 
225g strong flour
5g salt
40g cold unsalted butter, cubed
110-125g cold water

 

In a large bowl, mix your salt and flour together, rub the butter into the flour as you would for pastry. Add the cold water, holding your dominant hand like a claw and using your non-dominant hand to support the bowl, mix the dough together. Tip the dough out onto a clean work surface and knead the dough until it is smooth – this should take 2 to 4 minutes. You aren’t looking to build a lot of strength in the dough and it’s unlikely you will over-knead the dough. Cover with a tea towel and leave the dough to rest for 10 minutes. Divide the dough into 40g pieces and shape them into rounds before rolling them out on a lightly floured work surface until they are thin enough that you can nearly see through the them. Fry each tortilla in a dry cast iron pan (that is very hot!) for 20-30 seconds per side, wrap in a tea towel and leave on a cooling rack.
