French Peasant Soup with Fanny’s Biscuits
is recipe comes from Ballymaloe. The day it was made in demo, I sat there thinking, “okay, but when are they going to add the pheasant?”, before realizing it said ‘peasant’, not ‘pheasant’. Perhaps they were on my mind because it was the same week we plucked pheasants for fun after class.
Toad in the Hole with Roasted Root Vegetables
This is a favourite meal in my family, to lots of Canadians it means an egg cooked in fried bread — to my family that’s egg in a hole! Toad in the hole is an English classic – sausage cooked in Yorkshire pudding. Yorkshire pudding are really quite simple to make, so don’t be scared of this recipe.
Tomato Soup
I often serve this soup in my bread workshops and it’s one of my most requested recipes. I have adapted it slightly from a recipe from cooking school.

August Organics
I have been asked if I would ever consider doing a class that included a small tour of a farmers' market, instead of a class - I'd rather share a bit about the farmers and producers in a way that is more accessible to everyone. I'll be posting on my blog every few...
Rhubarb Fizz + Rustic Hummus Recipes
A quick post with a couple of recipes I've been asked for quite a bit recently! The rhubarb fizz cocktail is great to make when you have a glut of rhubarb and the shrub is a bit different than cordial! I serve my rustic hummus with chilli and parsley oil in classes...
December News
Over the last few weeks as classes wrap up and I say goodbye to students I can’t quite believe it when they say, “well, I won’t be seeing you again before the New Year,” or “Merry Christmas!” How is it nearly the end of 2017 already? What a great year it has been for...

Wow, more than a week is gone in April – and it has flown by. So happy to see the rain the last few days, and hoping the dust and brown is soon bright and green. Lovely to hear and see the birds, ducks and geese back, little signs that spring is really here. One of my...
Reflection
I often sit at my computer with the goal of writing a blog, but I get distracted and think about how I sat (nearly) every night in my bed at Ballymaloe and wrote a blog. I don’t know how I did it, yes of course I had a lot to talk about. But I have a list on my...
March News
How is it already March 1st? The good news is it means we are that much closer to spring and all of the new season produce I find March and April to be two of the hardest months in the kitchen – definitely the hardest months to shop and find inspiration. The fruit and...
