Radish with Thyme
This is such a simple way to cook radish – did you know that the greens have more nutritional value than the roots?
1 tbsp olive oil
a few sprigs of thyme
1 tbsp lemon juice
1 tbsp butter
salt and pepper, to taste
Slice the radish in half or quarters depending on the size, keeping the greens attached. In a frying pan, heat the olive oil, toss the radish and thyme in the olive oil, add the lemon juice, season with salt and pepper, cook for 5-7 minutes, until the greens have wilted, but the radish to still have a bit of bite to them. Add the butter, toss again, serve warm.
